Tart Lemonade Cupcakes

Makes 24 cupcakes

1 lemon cake mix

ingredients listed on back of box

1 envelope (.23 ounce) lemonade Kool-Aid mix

Topping

4-1/2 cups powdered sugar

1/2 cup butter or margarine, softened

4 tablespoons milk

1/2 envelope (.23 ounce) lemonade Kool-Aid mix*

1/2 teaspoon vanilla

yellow or white sprinkles

Preheat oven to 350 degrees. Prepare cake mix according to package directions and add contents of 1 Kool-Aid mix. Line two 12-cup muffin pans with cupcake liners. Fill each cup with 3 tablespoons of cake batter. Bake for 20 to 24 minutes. Allow cupcakes to cool.

To make the topping; beat powdered sugar, butter, milk, and second Kool-Aid mix in a separate large bowl. Stir in vanilla. If frosting is too thick, add 1 to 2 tablespoons milk. Frost cooled cupcakes and decorate with sprinkles.

*If you would like frosting to have a tarter lemon taste, add more of remaining Kool-Aid mix to the frosting.
